We love this sauce, because it can be made in advance for a week and creates seven main meals for under $70. Better yet, they are healthy, no added salt, balanced and SUPER quick meals that you can prepare for your family for mid week menu after the childcare collection.
Once you have the sauce, each recipe takes between 10-20 minutes to put together, which is perfect for a busy household that doesn’t want to compromise on nutrition.
Nutritionist Tip: Tomatoes increase in lycopene, a powerful antioxidant, when you cook them.
Prep time | 10 minutes.
Cooking time | One hour minimum.
Ingredients:
- 4 x 400g tins chopped tomatoes
- 3 medium capsicums, core removed – cut into large chunks
- 3 medium zucchinis, cut into large chunks
- 3 large carrots cut into chunks
- 1 small stick celery (optional)
- 3 medium brown onions, large chunks
- 3 medium garlic gloves, skin removed
- 3 tablespoons olive oil
- 5 fresh or dried bay leaves, ripped up into smaller chunks
Method:
- Using a food processor, put in onions and garlic blend until smooth.
- Heat a large pan, put in olive oil. Add onion/garlic from blender and bay leaves and stir.
- Add capsicum and celery to the blender, blend and add to the onion mix.
- Blend zucchini and carrots and add to the pot.
- Allow this vegetable mix to cook for at least 10 minutes, adding small amounts of tinned tomatoes if additional moisture is required to prevent burning.
- Keep stirring sporadically to stop from sticking.
- Add all the tomatoes. Rinse each tin with small amounts of water and add to the pot.
- Simmer this mix for at least one hour and up to 2 hours on low heat, with the occasional stir to stop from sticking.
- Cool and refrigerate for use throughout the week
Notes:
Formula is one medium onion and 1 clove garlic for one tin of tomatoes.
You can use this if refrigerated in air tight container, for up to 10 days.
