You can bake these in the oven if you have time, but we prefer the microwave for a really healthy meal in minutes. There are no rules for toppings, but we have this meal most weeks and have trialled many options of which we have here.

Cooking time | 10-20 minutes (depending on number potatoes).
Ingredients
Unwashed or skin on white potatoes: one small potato per child, one large per adult. You can use other potatoes such as sweet potato also.
- 1 x avocado
- 1 cup grated tasty cheese
- 1 washed and grated carrot
- 4 washed and sliced lettuce leaves
- ¼ can red kidney beans
- ½ cup frozen peas, put in hot water to defrost
- ½ head broccoli chopped
- 1 cup Chunky Tomato Sauce
- 1 tablespoon toasted sunflower seeds per person, toasted under grill
- 2 tsp Sweet chilli sauce per person
- Pepper to taste
Method
- Wash each potato and prick with a fork, at least 5 times, around the potato.
- Put on a microwave safe plate and microwave. For 4 medium potatoes, this is usually 10 minutes, but you may need to increase time, depending on your microwave power. Potato should be soft in the middle when pricked with a knife.
- Cut cooked potatoes open.
- Mash ¼ avocado into each with a fork, breaking up the potato.
- Add 1 tablespoon of tomato sauce, small spoon of beans, spoon of broccoli and top with some cheese.
- Microwave again for 2 minutes to heat up.
Top with grated carrot, peas, lettuce and optional ingredients. Final toppings are sesame seeds and sweet chilli sauce.
Nutritionist notes:
- You can use sweet potato for this recipe if you wish for an even healthier boost.
- Add shredded BBQ chicken if you feel like some protein.
